Skor Choc Chip Cookies


1 c. butter flavored crisco
2 eggs
1 c. brown sugar
1/2 c. sugar
1 tsp. vanilla
1 tsp. salt
1 tsp. baking soda
2 1/2 c. flour
1/2 pack choc chips
1/2 pack skor bits
(i can't remember the package size-- but you use the same amount of skor as you do choc chips.)

10 minutes at 375. makes about 3 dozen (depending on how much of the dough you eat!).

Frog Eye Salad


1 c. sugar
2 T. flour
1 3/4 c. pineapple juice
2 eggs, beaten
1 T. lemon juice (i don't think i've ever used this-- didn't have it on hand)
1 (16 oz.) package acini de pepe pasta
3 (11 oz.) cans mandarin oranges, drained
2 (20 oz.) cans pineapple chunks
1 (20 oz.) can crushed pineapple (it says drained, but i don't)
1 (12 oz.) tub cool whip
2-3 cups mini marshmallows
maraschino cherries (cut up and use as much as your heart desires. i added this to the recipe and i always add a litte of the syrup the cherries are in-- just to make the salad a cute pink.)

combine sugar and flour in saucepan. gradually stir in pineapple juice and eggs. cook over medium heat, stirring until thickened. remove from heat and stir in lemon juice. cool mixture to room temperature. while cooling, cook pasta. drain, rinse, and cool to room temperature. combine egg mixture and pasta. mix thoroughly. refrigerate overnight in airtight container. add remaining ingredients. mix lightly. refrigerate in airtight container until chilled. it says it serves 25, but i think it could do more. this makes a TON of salad.

Sanya's Ham & Noodle Casserole


1 onion
2 cans cream of mushrooom
1 c. milk
chop and cook onion. add soup and milk. remove from heat and add:
2 c. sour cream

8 oz. package of noodles-- cooked

4 c. diced ham

layer 1/2 noodles, 1/2 ham, 1/2 sauce in 9x13 pan. top with cheese. cook at 350 until done.

Salad


lettuce, cucumber, beets, tomato, cheese, bacon.

Macaroni, Broccoli and Cheese



found this in a magazine. the kids loved it.

2 c. uncooked pasta
6 oz. cream cheese
1 head broccoli
8 oz. cheese
saltine crackers
salt and pepper

oven to 400f or 200c. boil pasta for 7 minutes. transfer 1 cup pasta water to a bowl and add cream cheese. wisk til smooth. add broccoli to pasta. cook about 4 more minutes. drain and add cream cheese and cheese. add salt and pepper. put in casserole dish. top with crushed crackers and cheese. bake about 20 minutes.

puff pastry, strawberries, custard, strawberry topping, homemade whipped cream, chocolate sauce, chocolate chips. yum yum yum.

Jason's Chicken Dinner


chop an onion and cook it in like 1-2 Tbl. butter. cube about a pound of chicken and throw that in the onions. use about a palm each of garlic powder, allspice and rosemary. put in a can of diced tomatoes. add about 1/2 c. cream. add salt to taste.

we've always had this with rice and mixed veggies. yum.

Brandie's Oatmeal Cookies



1 cup each: shortening, sugar, brown sugar, nuts
2 eggs
1 1/2 c. flour
1 tsp. each: salt, soda, vanilla
3 c. oats

cream shortening and sugars. beat and add eggs. add the rest with oats and nuts last.
bake at 350 for 8-10 minutes.
makes 4 dozen, or 3 dozen if you eat a lot of dough like we do.

Spinach Pie


wash and drain frozen spinach. throw in some plain yogurt and feta cheese (i've also used just cheddar cheese, and it's good-- just not as good as feta). pour some melted butter in a dish that's about the size of a bread pan. use about 5 sheets of phyllo dough (for me that's all that's leftover after making sausage rolls). pour some more melted butter on the top after folding the dough over the spinach. bake at like 350 for like 20-- i don't know.

Everybody loves my Sausage Rolls


1 pound ground sausage (jimmy dean if you're in the best country), an egg, a couple carrots-- grated, a couple stalks of celery-- thinly sliced, italian seasoning and of course cheese. moosh that all up. get 5 sheets of phyllo dough and make a line of the meat mixture along the bottom and roll it up. do that 4 times or until it's gone. cut into decent sizes. melt some butter and 'paint' it on the rolls. bake at like 350 for at least 20 minutes (probably more like 30).

i know you should have a variety of colors on your plate-- and this plate looks pretty blah. but for some reason these foods go beautifully together. i love cauliflower, and i'll admit that i make the best mashed potatoes ever. the end.

Fry Bread and Chili



same chili from one of my first posts. fry bread recipe was from allrecipes.com but i wasn't too thrilled with it to tell the truth. it was good, just not light like i wanted.

for the kids i don't even try anymore- i leave the lettuce off. for us i load it on, as well as that arriba salsa.

cheddar cheese is supposed to be orange. weird australians.

Make yourself a dang quesadilla!


i love quesadillas. endless possibilities. and i love any excuse to use my forman grill. for these ones i just used chicken (can you tell i like chicken?), tomato and cheese. easy peasy.

p.s. i love this salsa! it's arriba roasted salsa from costco. yes, i smuggled it into this stupid country.

Yes it's just spaghetti-- but it's damn good spaghetti


my dad would spend hours making his famous spaghetti. i just don't have that kind of time, so i made shortcuts for everything. i always use angel hair pasta. can/jar of spaghetti sauce and lots of cheese. the key ingredient is the sausage. now in america i would always use kielbosa from sam's or costco. here... i just use whatever i can find. i'm lazy so after i cut up the sausage i microwave is so it releases it's juice. toss it all together.

garlic bread: it's so much better when it's homemade. mix garlic and italian seasonings into butter. after spreading it on the bread, sprinkle with paprika. bake at whatever for however long. :)

Meatloaf Beatloaf


i'm not going to lie: this was REALLY REALLY good.

moosh all of this together: ground pork, 2 eggs, 3 pieces of bread broken up (if you use the small bread then use probably 5 pieces), can of diced tomatoes, lots of cheese, italian seasoning, salt and pepper. bake at 350 for an hour.

by the way: meatloaf beatloaf is a line off of an all-time classic movie: a christmas story.

Chicken and Pasta


i had 5 chicken thighs that i cooked and shredded. i added 2 packets of goya sazon, cream, chicken gravy mix (i meant to grab chicken bouillon but it ended up good) and plain yogurt. salt to taste. serve over pasta and don't forget some veggies.

Damn Delicious Brownies


*another crap picture. i wanted people to feel sorry for me, so i was taking a picture of the tiny oven i have. waa waa waa. so this is a pic of the brownies before they're cooked.

2 cubes (1 c.) butter
1/2 c. shortening
4 c. sugar
2/3 c. baking cocoa
8 eggs
1 tsp. salt
2 1/2 c. flour
2 tsp. vanilla

cream butter, shortening and sugar. add cocoa. add eggs mixing well after each one. add salt, flour and vanilla. divide into two 9x13 greased pans. sprinkle with choc chips. i've also thrown in other things like m&m's, reeses, 3 musketeers... endless possibilities.

you could use two pans, or just eat half of it. holy cow is it good-- worth the risk of salmonella. bake 30 minutes at 350.

Apple Banana Muffins


3 c. flour
2 c. sugar
1 c. oil
4 eggs
1 tsp. each baking soda, salt and vanilla
1 banana
2 apples
cinnamon

bake at 300F for at least 20 minutes. just watch them.

Sausage and Rice Casserole


i love casseroles. cook 1 c. rice and throw in a chicken noodle soup mix. cook about a pound of sausage-- jimmy dean is the best but this stupid country doesn't have it, so any ground sausage will do. throw about half an onion, 1 green bell pepper, and 1 small case of mushrooms in -- all chopped (i like them super duper chopped up, that way my kids don't realize they're eating something healthy). mix everything up.

we like to eat this with buttered bread-- and then strawberries with my dip from heaven for dessert. yum.

German Pancakes

my mom made these while i was growing up and we all loved them. my kids love them too-- i don't know why they wouldn't... they're delicious.

preheat oven to 425. blend 6 eggs, 1 cup flour, 1 cup milk, and 1/4 tsp. salt. spray a 9 x 13 dish and pour mixture in. melt like 4 tbl. (can't remember and i don't want to get off my lazy arse to check) and pour that over egg mixture. bake 20-25 minutes. it rises really cool.

Allison's Enchiladas



everybody loves my enchiladas. *sorry* i don't know the exact measurements i use.

shred some chicken (i used 5 chicken thighs this time). throw in some shredded cheese and a can of diced chili. put in enough sour cream to make it a good wetness. (this time i used plain yogurt-- just because leftover yogurt gets used up faster than any leftover sour cream would. yogurt is a good flexible ingredient.)

pour a little bit of green enchilada sauce in the bottom of a casserole dish. put the chicken filling on a burrito and roll it up-- keep going until you've filled the dish. top with the rest of the enchilada sauce. sprinkle with cheese. throw it in a 350 oven for about 20 minutes.

3 Ingredient Scones



so easy and so yummy. mix a can of sprite, 1 cup of cream, and 4 cups self raising flour. my friend then rolled this out and cut out circles-- i'm lazy and i just scooped spoonfulls onto my silpat (love that thing).

hmmm. can't remember the temperature to bake it at. probably 350 F or 180 C. can't remember how long either-- just keep your eye on them.

top with strawberry jelly and whip cream (homemade is the best)-- or whatever your heart desires.

Tater Tot Casserole



napoleon dynamite would love this.

it may not look that good-- but i love this stuff. cook the ground meat and add whatever veggies you want. i usually throw in grated carrot and chopped celery. throw all of that in a casserole dish. throw a can or two of green beans on top of the meat (i usually do 2 cans because i love green beans). top that with any cream of whatever you want-- chicken, celery, mushroom-- they're all good. or i have also used leftover gravy and that was yummy too. top the soup/gravy with lots of taters. throw it in the oven at 350 for like 20 minutes. then sprinkle it with some cheese (all the cheese here is pale yellow. i miss my orange cheese!). leave it in there for 5 or 10 more minutes.

Fruit Dip from Heaven


if you have a sweet tooth like i do-- you really could make a meal out of this. so easy but SO DAMN GOOD.
mix a jar of marshmallow cream with 8 ounces of cream cheese. smear it all over my body and i'm good to go. no-- ha ha... but that's a thought! be sure to lick the bowl clean because it's yummalicious.

My Yummy Pumpkin Soup



this pumpkin is called kent pumpkin. not sure if it's called the same thing in america.

boil the cut up pumpkin and onion in chicken broth. once it's cooked-- toss it into the blender. add the goya sazon (love that stuff!). add the crackers until it's the consistency you like.
just for fun you can get a big loaf of bread (is that a loaf-- or just a huge roll?...don't know) and make it into a bowl. butter the bread you pulled out. yummy yummy for my tummy!

Meri's Casserole


we had this at a church get-together. when i saw this dish that meri brought-- i thought i'd taste it just to be nice (it didn't look good to me). but it was delish! my fave that night. and it's a hit even with my kids!

boil a can of water chestnuts, a bag of frozen broccoli, and 2 chopped up celery stalks. drain that off and add it to some nicely cooked chicken, along with one can each of cream of celery and cream of chicken. mix that all up and pour into a casserole dish. top with cheese. then top with puff pastry or unrolled crescent rolls (pictured is puff pastry). top with chopped nuts (pictured are cashews because i couldn't find any pecans in these stupid australian shops). bake at 200 degrees celsius-- i think that's about 400 fahrenheit. cook till the pastry looks nice and crispy.

cook ground meat with onion. add one can of ranch style beans and one can of diced tomaters. pretend you're a lost cowboy just trying to find his way home and it'll warm your soul.
